Introduction
The Bakery Production Manager is responsible for overseeing all aspects of the bakery department within the retail store, ensuring the production of high-quality baked goods, efficient operations, and exceptional customer service.
The role involves managing a team of bakery staff, maintaining adequate inventory levels, and ensuring strict adherence to food safety and hygiene standards.
This position requires strong leadership, organizational ability, and effective communication skills, as well as a commitment to maintaining company standards and operational excellence.
Description
Key Responsibilities
Bakery Operations
- Plan, organize, and oversee daily bakery operations, including production, packaging, and display of baked goods.
- Ensure the quality, freshness, and consistency of all bakery products through standardized recipes and proper baking techniques.
- Implement and maintain product rotation procedures and quality control standards.
Team Leadership
- Manage and schedule bakery staff, including recruitment, training, performance management, and disciplinary action when necessary.
- Provide ongoing training on baking techniques, hygiene standards, food safety practices, and customer service.
Inventory & Supplier Management
- Monitor and maintain inventory levels of ingredients, packaging, and supplies.
- Place orders and coordinate with suppliers and vendors to source high-quality ingredients and equipment at competitive prices.
Sales & Business Performance
- Monitor bakery sales performance and analyse sales trends.
- Develop strategies to increase revenue, improve product offerings, and enhance profitability.
- Implement marketing and promotional initiatives to drive bakery sales and customer engagement.
Food Safety & Compliance
- Maintain cleanliness and sanitation standards across equipment, workstations, and storage areas.
- Ensure compliance with health and safety regulations and company policies.
- Oversee the proper handling, storage, and preparation of food products in accordance with hygiene standards.
Customer Service
- Handle customer enquiries, complaints, and special orders in a professional and efficient manner.
- Ensure the bakery department consistently delivers excellent customer service.
Collaboration
- Work closely with store management, purchasing, and marketing teams to optimize bakery operations and product offerings.
Education Profile
Minimum Requirements
- Matric / High School Diploma
- Proven experience managing a bakery or bakery production environment
- Food Handler’s Licence
- Sound knowledge of baking techniques, bakery production processes, and food safety standards
- Strong leadership and team management experience
- Ability to work well under pressure in a fast-paced environment
- Excellent problem-solving and decision-making skills
- Strong communication and interpersonal skills
